Weight Loss Recipe: Rainbow Fritters & Poached Egg

I wanted to share with you my amazing weight loss recipe for Rainbow Fritters and Poached Eggs this morning.

I was getting another recipe ready for the 30 day challenge and before I tucked in I just had to film cutting into my poached egg.

Fast and Easy

This meal was so good and the best thing about it is that it’s fast and easy to make. It’s also super healthy and lower carbs. Plus there’s plenty of veggies & protein for you.

Everyone will LOVE THEM

…even Danny had some fritters this morning which I made into yummy muffins. Yum, Yum.

Here’s the recipe

INGREDIENTS

  • 1/2 Small tin sweetcorn
  • 1/2 chopped onion
  • 3 Tbsp cooked peas (they were in my fridge from yesterday)
  • 1/2 Chopped red pepper
  • 4 eggs
  • A pinch of salt & pepper to taste

Method

  • Mix all the ingredients together.
  • Add some coconut oil to a hot pan.
  • Split the mixture into 4 and cook like small pancakes.
  • Flip and make sure they’re cooked through.

I served mine with yummy runny poached egg.

You could also enjoy this with some chicken sausages, bacon, halloumi or on their own for added protein.
