Quick & Easy 15 Minute Mushroom Bolognese

Are you ready for another 15 minute recipe to make dinner-time quick, easy and stress free? All you need is fresh mushrooms, the rest of the ingredients are likely to be sitting in your freezer and cupboards.
If you’re trying to get more veggies into your day, this recipe is fab. I made a big bowl for me and for Danny, although he decided he didn’t like mushrooms after getting through 80% of it (he still ate them). So it’s (kind of) had the toddler seal of approval too.

So here’s how to make your delicious 15 Minute Mushroom Bolognese…
INGREDIENTS:
625g Mushrooms
1 frozen diced onion
2 tins chopped tomatoes
1/2 tspn lazy garlic
1 tsp oregano
1 tsp basil
salt & pepper to season
Blue Dragon 5 minute wholewheat noodle nests
HOW TO:
- Cook the onions, garlic, herbs & seasoning in a hot pan for 2 mins.
- Add the mushrooms and stir for 3 mins.
- Add the tinned tomatoes and cook on a medium heat for a further 10 mins. In the meantime add your noodle nests (1 per person) to a pan of boiling water for 5 mins.
- Once all are cooked, serve immediately and enjoy.
The bolognese recipe makes 4 portions, perfect for extras.
