Brekkie, Brunch, Snack or Lunch

In the plan we've got a little cooking challenge going on.
Emma wanted a bit of motivation to try new meals as she was getting bored of the same things, so we got creative.

There have been some lovely ideas from the girls.
King Prawn Risotto from Samantha
Chicken Pate from Lucy
Katsu Chicken Curry from Helen and as Emma was the instigator, I thought I'd share her Ham & Egg Courgette Cups.

INGREDIENTS

  • courgette thinly sliced (Using a potato peeler),
  • 2 eggs,
  • 2 spring onions,
  • 4plum tomatoes, slice of ham, salt, pepper, chilli flakes

HOW TO:

Place the courgettes in a muffin tray in criss cross pattern to create the base. Next, mix all the other ingredients together. Split evenly into the cups. Pop into the oven pre-heated at 160-180 degrees for 12-1 mins or until cooked through.

Check Out This Home Workout

Yesterday I had a quick 10min workout at home whilst Danny had a little run around the living room. There were a few times that I had to hide my weights from him, but once he was distracted by his toys, they came back out again.
It's a bit disjointed doing it from home but It still gets done.

We can all find 10 mins somewhere. It wont be ling before I had Danny joining in with me - ha.

Simple Mindset Tips

We all know that we need to eat well and exercise regularly

This photo reflects my morning.
I got up early, made myself a cuppa, lit a lovely candle and read my books in peace and quiet.

You don't need long, but investing a small amount of time I to yourself before the chaos kicks off is worth the earlier alarm.

If you wish you worked on your mindset more - then start. Nobody can do it for you, but we can inspire you to do it.

Now I know that doing ‘Mindset stuff’ is brand new to people and where on earth do you start, so I’m gonna give you some tips now and hope it helps you feel more positive and in control of your thoughts, feelings & emotions.

Listen to a podcast.

They’re free and you can listen to them on any smart phone or tablet. Just search for one you fancy and listen in the car, on a walk or at home. They can last from 10 mins to 45mins.

Ones I love are

  • Mine (obv)
  • Brendon Burchard
  • The Food Medic
  • Robin Sharma….but you can find any one you enjoy.

Listen to an Audio book

I have a subscription of £7.99 a month to have a new book every month and I enjoy listening to these in the car.

Two fab ones I've listened to recently are:

  • The One Thing
  • How To Consciously Design Your Ideal Future

Read A Book

This is actually my #1 . I first started by reading The Secret and my passion went from there.
I also love:

  • What I know For Sure – Oprah Winfrey
  • Daring Greatly – Brene Brown
  • Loving What Is – Byron Katie
  • The Daily Stoic

Watch a YouTube video

Just type in Motivational Video and there will be soooo many to choose from. You an subscribe to a channel and catch all you fave channels when they have new vids.
Hope these tips help!
