Welsh Cake Recipeeeeeeeeee
Dydd Gwyl Dewi Hapus! (Happy St Davids Day) In wales we celebrate on 1st March St Davids Day. My facebook newsfeed is filled with cute children dressed as welsh ladies. There’s daffodils everywhere. We love CAWL (You know what that is?) and we love welsh cakes!! So I’m being generous and kind and cakey and sharing this recipe with you today Welsh cakes 2 cups of ground almonds 1 cup of pea protein ¼ cup of coconut oil 1 tablespoon of honey 2 whole eggs 1 tablespoon stevia 1 teaspoon of vanilla extract 2 teaspoons of baking powder 1/3 cup of raisins ½ cup of almond milk ( add ¼ cup at a time) Mix all the dry ingredients except the stevia, then add the wet ingredients and mix into a soft dry dough, divide into 12 small pattie shapes and place on greaseproof paper, bake in the oven 150 for 15 minutes, I then dry fried the top to give a classic welsh cake look ( but be careful not to burn), take out of pan and sprinkle with stevia 7g carbs, 2 grams fibre, 7g of protein, 13g fat Enjoy!
