Recipe: To CELEBRATE National Chocolate Week

Well . . . . . if ever there was a ‘national week’ that
I’d want to get involved in, it would be this week…

NATIONAL CHOCOLATE WEEK!!

Well…how rude would it be not to get involved!!

So, as my contribution to the week, I’m sharing with you a clean chocolate recipe – Mini Brownie Bites.

Brownie bites

  • 1 sweet pot cooked
  • ¼ cup melted coconut oil
  • Seeds of one vanilla pod, or use quality vanilla essence
  • 2.5 tbs coconut flour
  • 4 tbs cocoa
  • ¼ tsp baking powder
  • Pinch of salt
  • 3 eggs

Mix cocoa, coconut flour, salt and baking powder in a bowl.

Mix sweet pot, eggs, coconut oil and vanilla essence in a blender, then add to the the dry mix and combine well. I used a mini muffin tray and this mixture made 20, but you can tip the mixture into a brownie tray if you prefer.

Place in the oven at 160 and cook for 15 minutes in mini muffin tray, in a brownie tray I would say 20-25.

4 small muffins would make a serving.

You could add some walnuts, seeds or goji berries to the mix if you like or top with flaked almonds.
