RECIPE: Low CARBonara YUM YUM
I’m giving you this amazing recipe
as a weekend treat.
500g spiralised courgette
2 shallots (thinly sliced)
300ml soured cream
5 slices medallion bacon (chopped)
30g grated parmesan
¼ tsp ground nutmeg
Season with pink himalayan pink salt and black pepper.
Heat a non stick frying pan, add a little coconut oil or butter,
add in your shallots and fry for 2-3 mins until softened then add bacon, fry til golden.
Turn down the heat and add in the soured cream,
nutmeg and seasoning.
Simmer for 2 minutes then add in the parmesan and stir in,
keep stirring as it thickens.
Add in the courgette, do not cook the courgette!
Stir the sauce so it coats all of the courgette,
dish up and sprinkle with a little parmesan and serve immediately.
