Recipe: It’s Vegan….Which is HUGE!

I've made this one a totally delicious vegan meal.
I'm not Vegan, but I am very much what you could call a 'Flexitarian'
I like lean meats, fish,
I get on well with dairy and I'm loving experimenting more with Vegan meals.

According to stats the number of Vegans in Britain has risen by more than 360% in the last 10 years.
Supermarkets are reporting a surge in sales of vegan foods,
Supplement stores are offering more vegan proteins and workout drinks
Restaurants are offering more vegan meals,
Athletes are sharing their health & performance improvements since changing their eating habits
Even major sports brands are promoting the vegan diets featuring super star athletes
Veganuary got people thinking more consciously about their food and many are now being more mindful of what they put in their body.
And with the documentary "What The Health' being launched this time last year and the forthcoming movie 'The Game Changers' this is something that is going to increase peoples attention and change the way people think about food.

So today I'm sharing this recipe with you which ticks every box when it comes to a health meal.
There's so much flavour,
It's filling,
Balanced,
Cheap & easy.
INGREDIENTS
For the TIkka Tofu:
1/2 pack The Tofoo Co Tofu, chopped into chunks
1 tspn garam masalla
1/2 tspn chilli flakes
HOW TO:
Heat a big pan, add the coconut oil then all the ingredients for the soup. Simmer for approx 30mins. Or you can add it all to the slowcooker on medium and leave for 4-6 hours. Blitz with a hand blender to your desired consistency. Mix the tofu with the spices. Pop on a hot pan and cook evenly for 5-7 mins.
Serve your soup hot with half the tofu and sprinkle with some seeds. This recipe made 3 servings.
You can always double the recipe to make a good batch of soups to keep in the freezer.
