(Recipe for you) Bet you didn’t think you could eat THIS

Do you love carbonara??

Well…it can be well and truly on your menu whilst working to lose a few pounds, drop a few inches and wear a smaller dress size with my little gift for today.

LOW CARBONARA

INGREDIENTS

  • 500g courgette noodles (or try carrot / butternut squash)
  • 2 shallots (thinly sliced)
  • 300ml soured cream
  • 5 slices medallion bacon (chopped)
  • 30g grated parmesan
  • ¼ tsp ground nutmegSeason with pink himalayan pink salt and black pepper.

HOW TO

Heat a non stick frying pan, add a little coconut oil or butter, add in your shallots and fry for 2-3 mins until softened then add bacon, fry til golden. Turn down the heat and add in the soured cream, nutmeg and seasoning. Simmer for 2 minutes then add in the parmesan and stir in, keep stirring as it thickens.
Add in the courgette, do not cook the courgette! Stir the sauce so it coats all of the courgette, dish up and sprinkle with a little parmesan and serve immediately.
