Recipe: Asian Style Chicken Meatballs

How’s your week going so far?
Very often people can get to this point in the week quite motivated, then it starts to take a dip.
Food prep starts to run out,
Motivation starts to dwindle,
Little bad habits start to creep back in.
So, I’m sharing this recipe with you for a bit of healthy eating motivation.
All you need for this is some chicken, some veggies an egg and your oven.
This could be the perfect way to make something cheap and quick and have plenty for Dinner and lunch the next day.
Here’s the recipe for you:
Asian Style Chicken Meatballs
INGREDIENTS
450G DICED CHICKEN BREAST
½ Red pepper
½ Yellow pepper
3 Spring onions
1 egg
75g oat flour (normal oats from the blender)
Salt & Pepper
1tbspn Soy Sauce
1 tspn Worcester sauce
1 tspn chilli flakes
At the end:
2 Tbson plum sauce
2 Tbson milled flax seed
HOW TO
Add all your ingredients together (apart from the ‘at the end’ ingredients) in a food processor. Shape into 12 balls and place on an oven proof tray. Pop in the oven at approx 160 degrees for 10-12 mins. Turn them over and pop back in for a further 6-8 mins. Eat immediately or enjoy cold. 3 Meatballs would make a serving.
