You allergic to BOREDOM?

Little excited about what to choose next.


So yesterday, there I am reading about personality and

having a little think about mine. Whilst I confirm what

on a four and a half hour train journey from Manchester.




I’m not the best traveller so trying to be productive

Is better in theory than reality as I have to have little breaks

or I feel ill.


One thing though (not sure if you’ve tried it)

I’m actually better going backwards?!?!


Also, I’m so glad I was organised and took plenty of water and made some

Of my low carb, high protein ‘No Whey! Wraps’ to eat because

Being bored with a choccy trolley trying to seduce you would

Have been hard.


And imagine the face I would have had if I asked if there was

Anyway, as I continued to ‘Train Think’ I realised

You haven’t had a recipe off me this week!

So, I have a lovely soup for you.


Great for lunch – not to heavy.


Great for dinner – hot & comforting.


Great for prepping – make a big batch and portion for a few days


Great for your pocket too!


Beef, Rosemary & Vegetable Soup


500g Diced Beef

4 x Medium Carrots

1 x Small Swede

1 x Medium Parsnips

1 x Large Onion

3 x Celery Sticks

1 Tin Chopped Tomatoes

1 x Pint Beef Stock

1 x Clove Garlic

1 1/2 tbs Tomato Purée

1 tsp Chilli Flakes

Rosemary – Pinch

Thyme – Pinch

2 x Bay Leaves

Coconut Oil

Coconut Flour

Salt & Pepper to taste



Peel and dice all veg and put to one side, Add sprinkle of flour to chopping board , add beef and mix into flour, add salt n pepper.

Heat the oil in a large pot over a medium heat, add the beef pieces and cook for 4-5 minutes, or until browned on the outside but not completely cooked through, then remove from the pan and set aside to rest on a warm plate.

In same pot add oil again then add onions and garlic and cook for 2 min. Add veg stir for 3 min then add tomato purée and stir in.

Add tomatoes and beef stock. Bring to boil, add beef then turn down heat to v. low. Add chilli, rosemary , thyme and bay leaves. Put lid on pot and cook for 2 1/2 hrs on a low heat. After 2 1/2 hrs  remove beef chunks and put to one side. Remove bay leaves. Get hand blender and blend everything in pot until you have a soup purée . Add meat and cook for 5 min.

Serve some immediately. You can portion out the rest for another day or freeze.
