Turkey, Bacon & Sprout Soup
If you want a change from the typical turkey sandwiches and curry, try this totally yummo soup.
After way too much indulgence from Christmas Day ad Boxing Day (and the build up) you can enjoy this delicious meal that is clean and easy and one step closer to getting back on the healthy eating wagon!
Turkey, Bacon & Sprout soup
1 large red onion
2 sprigs of thyme
1 pack of lean bacon (chopped into litle slices)
left over turkey 200g
1 chicken stock cube
Fry the red onion in a little coconut oil, add the carrot and season with salt & pepper, fry gently for a few minutes. Add sprouts to the pan along with 500ml of the water and 2 sprigs of thyme. Leave to simmer for 15minutes or unitl sprouts are soft, then blitz with a hand blender. In another pan fry you lean bacon and the remaining sprouts halved. To get all the flavour of the bacon into the soup, tip a little of the soup into the frying pan swill around the pan and then tip back into the rest of the soup. MMMM amazing. Serve into bowls and add a tbs of greek yoghurt and swirl.
