Recipe: Home-made Chicken & Mushroom Soup

And a request for a recipe for something comforting in this blustery, dark UK weather.
I’ve been busy putting the final touches to my brand new eBook the past few days – It’s so brand new I can’t even think what to name it, so if you have a creative imagination – you’re ideas would be great!
So I’ve decided to share one of my home-made soup ideas with you today.
I had it last night and it was so delish. I’d been to a yoga class, I was late getting home and there it was, all ready for me to heat up and enjoy. Perfecto! Not too heavy, nice & balanced and quick!
INGREDIENTS
700g (2 big containers) Mushrooms
6 Celery Stalks
1 Large Sliced Onion
2 Cooked Chicken Breasts
6 Cups Hot Water
Cracked Black Pepper
HOW TO:
Slice your veggies and cook them in a pan for approx 5 mins or until softened. Add the chopped Chicken breast and hot water and simmer for another 5 mins. Blitz in a blender to consistency of your own choice. Serve hot on its own, leave out the chicken if you’re a vegetarian and add a tablespoon of Greek yoghurt. you can build up the meal with a large side salad or 1 savoury protein muffin or slice of protein bread.
