Recipe: Harissa Spiced Sausage & Egg

Yesterday on my Instagram I shared a photo of the Harissa Spiced Sausage & Eggs from the 6 week body plan.

This is such a delicious recipe and one that everyone with love.

What's not to love with sausage & eggs...you can even replace the sausage and eggs with some chickpeas & tofu to create a vegan style version. I may try that soon.

So I'm going to share the recipe with you now.

INGREDIENTS

  • 8 Chicken sausages
  • 1 Diced onion
  • 1 Small pack of sliced cherry tomatoes
  • 4 Eggs
  • 12-14 Pistachio Nuts
  • 1 Tbsn Barts Harissa Paste
  • 1 tspn coconut oil


HOW TO:

Pop the oil into hot pan. Add the sausages and onions and cook for 8-10 mins until softened and browned. Add the tomatoes & mix in the Harissa paste. Keep mixing for a few minutes until tomatoes have softened. Crack the eggs into the pan and pop under the grill until eggs are cooked. Once cooked sprinkle the nuts all over and serve. This recipe makes 4 servings.
