Recipe: It’s Comfort Food Time

How does a 5am alarm make you feel ?
It’s not as bad in Spring or Summer when it’s light.
5am is still a bit of a struggle, but its easier when it’s warmer and lighter.
This morning….GAH!!
Dark
Cold
Raining
Bleurgh
“I’m so going back to bed when I get home”
That never happens, but it is a mental battle that time in the morning.
Anyway, as I was putting the kettle on,
listening to the rain having a little think…
…I thought….
We all need something nice and hot & comforting.
So I thought I’d share one of the new recipes from the Inner Circle this month.
It’s a Curried Chickpea Slowcooker Stew.
This ticks lots of boxes.
It’s EASY: So get your slowcooker out ready for it to get some action
It’s CHEAP: Always a winner
It’s COMFORTING and ready for you after a long day.
It’s Suitable for Vegans, Vegetarians and If you’re a fish or meat eater you can have a smaller portion and top your stew with some salmon, beef or chicken.
So here’s the recipe for you:
INGREDIENTS:
1 onion
1 pack of pre chopped swede & carrot
1 cauliflower head
2 tins of chick peas
2 handfuls of spinach
1 tin of tomatoes
1.5 cans of water
1 tspn garam masala
1 tsp turmeric
1 tsp chilli flakes
Salt & pepper to taste
HOW TO:
Turn your slowcooker onto a low setting. Add all the ingredients apart from the spinach. Cook on the low setting for 8-10hours. Just before serving, add your spinach to the stew until wilted and enjoy immediately. If you’re batch cooking, don’t add the spinach until serving. Great for feeding the family or batch cooking and popping some in the freezer.
