Recipe: Chickpea & Mushroom Burger
Just got in from a lovely walk with Danny in the sunshine.
He picked his first seashell for me and I'm going to pop it into his timecapsule later with a photo of him holding it
(When he's 18 I will be crying my eyes out giving him that!)
As we're all so happy happy to have a bit of sunshine and look forward to a gorgeous weekend,
I'm gonna share this burger recipe with you.
This is YUM YUM YUM
With this recipe I made a load of burgers and some small balls for Danny - This is ultimate Family Food.
It's suitable for vegans so whether you're vegan or not, give it a try.
Getting your veggies and fibre in has never been so delish!!
Chickpea & Mushroom Burger
Put the mushrooms in a food processor until finely diced. Add to a hot pan with the chopped onion and spices. Whilst cooking, mash up the chickpeas (pop in the food processor). Once mushrooms & onions are cooked through, drain off any water, add the mashed chickpeas and mix together. Next, let the mixture cool before splitting into 8 and shaping into a burger. Pop under the grill and cook for 5-6 mins on one side, flip over and grill for a further 3-4 mins. Serve with your fave veggies or salad. 2 burgers will make one serving. Enjoy the rest with the family of pop in the fridge ready to grab and go the next day.
