Quick & Easy 15 Minute Mexican Bean Soup
Do you ever have those days were you’re rushing around, trying to juggle a hundred different things at once and get no time for yourself or even time to eat? I find the stress of days like this can be reduced by keeping dinner time quick and easy, so I’m going to share one of my delicious 15 min recipes for the next hectic day you’re struggling to find time to spend in the kitchen.
I recently had one of those days, my morning was filled with the school run, working with clients and back to back meetings. Once I had made it through the morning I had to take Danny to the dentist (Danny doesn’t play game in the dentist so I had my teeth checked instead – I wasn’t booked in), home, food, client, prep for today, shower, bed.
Within all of that was dinner. I needed it fast and healthy but I was unorganised and unprepped, so I created the 15 minute Mexican Bean Soup…..and it turned out amazing!
I made plenty for next time when I’m struggling with the juggling. It was made from ingredients I often have lying around in my cupboards so I didn’t have to worry about getting to the shops. It was hot, comforting and delicious. All in 15 minutes – It can take longer in the drive-thru queue than it took to make this.

1 diced frozen onion
3 tins chopped tomatoes

1 kidney beans
1 tin black beans
1 tin black eye beans
1 pack wholegrain express rice
1 tin sweetcorn
1 tsp cumin powder
1 tsp paprika
1 tsp chilli flakes
1 tsp crushed garlic
salt & pepper to taste
- Add the onion and spices to a hot pan with a little oil. Soften for 2-3 mins, then add all the other ingredients. Simmer for 15 minutes and hey presto! It’s that easy!
This recipe makes 4 servings. Enjoy hot immediately and if you’ve got portions left over pop them in a container for the next busy hectic day.
