Fancy a Welsh Cake & a Cuppa?
There’s been creativity in the kitchen again and yet another classic has been

We have WELSH CAKES
Like the CWTCH I mentioned yesterday, they’re a bit of a hybrid
Of amazing stuff mixed together into
one magical creation.
A bit like us really!
Now I’m no baker by any means but I’d describe
A welsh cake as a bit of a scone, but not as deep with that lovely
Spicy sweet flavour like a hot cross bun
But rather than restricting yourself to Easter,
you can have them any time of year.
Well…..my version you can! 😉
Protein Welsh Cakes
2 cups of ground almonds
1 cup of pea protein
¼ cup of coconut oil
1 tablespoon of honey
2 whole eggs
1 tablespoon stevia
1 teaspoon of vanilla extract
2 teaspoons of baking powder
1/3 cup of raisins
½ cup of almond milk ( add ¼ cup at a time)
Mix all the dry ingredients except the stevia, then add the wet ingredients and mix into a soft dry dough, divide into 12 small pattie shapes and place on greaseproof paper, bake in the oven 150 for 15 minutes. Next, dry fry the top for a few seconds each side to give a classic welsh cake look, take out of pan and sprinkle with stevia.
1 Serving is one welsh cake
7g carbs, 2 grams fibre, 7g of protein, 13g fat
