Day 23: Try these stuffing balls x
Yesterday I finished my shopping (managed to squeeze all
of my Santa duties into 2 shifts – result!)
So with only 2 more sleeps, that means you still have two whole days to try and stay
On top of your clean eating plan.
Today I’m sharing another recipe with you, which would be
as yummo stuffing balls on your
or you can make them as meatballs for absolutely any time of the year.
They’re meaty, yummy and suuuuuuper quick!!
Pork and Apricot Stuffing
250g pork mince
6 dried apricots
1 egg white
1/4 cup ground almonds
4 rasher lean bacon diced
3 sprigs of thyme (remove leaves from stalks)
salt & pepper
Mix all of the ingredients and mould into 6 balls, place in oven on a baking tray @ 180 for 18-20 minutes. Turn balls half way through cooking time.
