Breakfast Burrito Recipe

Here I share with you my Breakfast Burrito recipe from my Creative & Clean Recipe eBook!



2 Eggs

1 tsp Psyllium Husk

1 Slice good quality Ham / Bacon / Smoked Salmon

Sliced Mushrooms

Spinach Leaves

1 Scrambled Egg


First mix your eggs and husk thoroughly together. Heat a tsp of coconut oil in a hot pan and pour the mixture in.

Cover the base of the pan with the egg mixture and cook on one side for approx a minute. Flip it over and cook for another 30-45s or until cooked through.

Once cooked, pop to the side and prepare your filling. Add the filling of your choice to the pancake, roll up and enjoy immediately or allow to cool and enjoy for on the go.


This is perfect for a weekend brunch or for on the go to take to work for lunch during the week. Protein packed, high in fibre and clean!
