500kCal Meal Recipe: Cajun Turkey & Quinoa Mix

Not sure if you remember the meal prep I did on Sunday which took no time at all.

Well, it made 6 meals which I separated and popped in the fridge.

Yesterday I had it for my lunch, posted it on my Instagram and promised to share the recipe.

So that's what I'm doing now:

INGREDIENTS

  • 2 X 500g Turkey Mince
  • 2 tins chopped tomatoes
  • 1 diced onion
  • 400g chickpeas
  • 1 pack Zesty Bean Quinoa (Iceland)
  • 1 tspn ground cumin
  • Salt & pepper
  • 1/2 tspn chilli flakes
  • Pinch Salt & pepper

HOW TO:

Cook the onion & turkey and add the seasoning & spices. Once cooked add all the other ingredients. Simmer for 15-20mins. Split into 6 portions and serve with your fave veggies.


I used broccoli and green beans.


This is such a delicious recipe, and for just under 500kCals it's

  • High in protein
  • Low in Fat
  • Low in Carbs
  • Has a great amount of fibre
  •  Is really filling and will be great for lunch or dinner.

Literally just throw everything in the slowcooker. Put on medium for 4-5 hours or low for 7-8 hours and it’s done.
This makes 4-5 servings and you can enjoy with your fave veggies. I had green beans and 2 tablespoons of whole grain rice.
