Save Santa’s Willpower & Waistline!

Can you even begin to think what a tough time Santa has?!?
Oh my word!
Rather him than me.
I reckon when he’s in Australia, his willpower is at it’s strongest, as that will be the beginning of his day. So he probably resists temptation quite well there.
But by the time he gets to Europe he must be finding it hard.
starting to get a bit hungry
unless he’s prepped his meals (which I doubt he has) he’s going to be looking for something.

Well…..this year lets give him a helping hand
My Spiced Almond Protein Cookies are clean and delish,
so we can look after Santa and he’ll feel happy,
refuelled ready to take on the rest of the world!
1/4 cup pea protein
1/4 cup vanilla whey protein
1/4 ground almonds
1/4 coconut milk
1/2 teaspoon mixed spice
1/2 teaspoon vanilla essence
2 heaped tbs almond butter
Mix all of the above to form a rough dough. Mould into six cookies and place either on a cookie tray or in the bottom of muffin trays. Cook at 170 degrees for 6-10 minutes. They should still feel a little soft to touch but can see the underneath is slightly hardening. If you want them a bit crunchier, leave them in a little longer. Remove from tray and place on a wire rack.
