Pancakes vs Truffles!

My blog is looking like a recipe website at the moment, but I can’t help it! February has made me do it. With Shrove Tuesday and Valentine’s day coming up I just had to come to the rescue with some healthy ways to get involved!
So don’t worry, I haven’t given up my day job. I’m still Keeping busy with my Personal Training in The Dragon Hotel in Swansea…and Swansea Bay…and the Admiral sites across South Wales..and Online, but now I just have to share so I’m adding a few in one here! Let’s Go!!

GLUTEN FREE, COCONUT FLOUR PANCAKE

PROTEIN PANCAKE

This one is a twist on the classic with raisins, lemon and stevia (I used Truvia)
Protein pancake

INGREDIENTS
1 scoop whey protein (vanilla or unflavoured)
2 Egg whites
Small handful raisins
Lemon
¼ teaspoon truvia coconut oil

THE PLAN:
Melt the coconut oil in a pan and mix the egg white & whey together
Add the batter to the pan and swish it around. Half way through sprinkle your raisins in. When the bottom is cooked (about 30-40s)
Do what you gotta do……FLIP?? TOSS?? CHICKEN OUT AND PUT IT UNDER THE GRILL???
One the second side is cooked, slide it out, squeeze your lemon, sprinkle your truvia and eat it in whatever shape you like. I rolled mine up but a triangle would be pretty too! Voila!
High protein, High Yummo!!

RASPBERRY AND CHOCOLATE PROTEIN PANCAKE (TO SHARE)

Choco Raspberry Pancake
This one is like joining Pancake Day with Valentines Day!! It’s pancakey, chocolatey, sharey and scrummy! As you can see, I shared!

INGREDIENTS
The pancake:
1 Scoop chocolate Whey protein
2 Egg whites
The sauce:
1 cup cottage cheese
1 tablespoon 100% cocoa
1 teaspoon cinnamon (optional)
The Topping:
Raspberries (or any berry you fancy)

THE PLAN:
First make your sauce. Blend your cottage cheese (I use a magic bullet) with the cocoa & cinnamon so it’s nice n smooth.
Then cook your pancake as per the instructions above in the classic protein pancake.
Once your pancake is cooked, slide it out flat onto a plate, then pour your chocolatey sauce on top and spread it about evenly whilst looking at it thinking ‘OMG, this is looking epic!’
Then scatter all your raspberries over the top. Make it look pretty with a dusting of cocoa or cinnamon the serve with 2 forks!!! OH YEAH!!!!

VALENTINES TRUFFLES

Choc truffles
So if you’re feeling all romantic and what to get your pinny on and light some candles whilst you make this one then go ahead!! Your loved one can indulge AND stay on track with these high protein & healthy fat truffles.

INGREDIENTS
2 scoops chocolate whey protein
1 tablespoon natural almond butter
1 tablespoon 100% cocoa
2-3 tablespoons water (add this in slowly and mix until it’s mouldable)
2 squares 85% cocoa chocolate

THE PLAN
Mix all your ingredients together and split into little balls and roll them around in your hands. Once all rolled up pop them onto some greaseproof paper and cook in the oven on 160 degrees for 10 mins (you could also just pop them in the fridge for an hour and have them chewier).
Melt the 2 squares of choc (Yes, this is a bit indulgent but it’s a winsy bit) and spoon a small amount onto your balls. Then add them to the fridge for 30mins.
Serve with a red rose and enjoy
10/10 in the romance test!!

    May I simply say what a relief to uncover someone that actually knows what they’re discussing on the net. You certainly realize how to bring a problem to light and make it important. A lot more people have to read this and understand this side of your story. I can’t believe you are not more popular
    given that you most certainly possess the gift.
